Grilled Chicken Panini
- 4 slices artisanal panini bread
- 2 chicken breasts
- 4 slices mozzarella cheese
- ¼ red onion, sliced
- 1 tomato
- 1 cup baby spinach
- 1 teaspoon poultry seasoning
- 1 tablespoon butter
- Salt and pepper
Turn panini grill on and preheat to 400 F.
Season chicken breasts with poultry seasoning, salt and pepper.
Place on grill and grill for 7 minutes on each side.
Add one chicken breast, 2 slices of mozzarella cheese, sliced onion, sliced tomato, and ½ cup baby spinach to each panini.
Brush butter on the outside of each panini and place on grill. Grill for 5-7 minutes.
